Yeah, into bites about the size of my thumbnail. My grocery store sells the trimmings from larger slabs of lox, by the container. I picked some up last week and have been using them as inspiration strikes. It's a nice way to get the flavor without spending $$.
I had some saffron rice from last night's dinner in the fridge, a bunch of fresh scallions, a couple of eggs, and the salmon bits, so I figured, hey, why not? Very much yum, very filling.
I also make appys out of sushi rice mixed with softened low-fat cream cheese wrapped around the same lox bits (unsalted works better). Variation on what my local Sushi shop calls a (I kid you not) Hanukkah Roll (which is a standard sushi roll with cream cheese and salmon inside).
Lox bits also work in lo-mein with the right sauce...

Lox is smoked salmon, right? Have you ever tried scrambled eggs with smoked salmon? Just a little bit of creme fraiche mixed in when it's finished cooking. Yum. I used to get this when I was still a omnivore.
I'm torn between "What are you doing?! That should be on top of a nice bagel!" and "You can do almost anything with enough supercooled gas (I'm also thinking of the do-it-yourself liquid-nitrogen ice cream recipe)."
