I also make appys out of sushi rice mixed with softened low-fat cream cheese wrapped around the same lox bits (unsalted works better). Variation on what my local Sushi shop calls a (I kid you not) Hanukkah Roll (which is a standard sushi roll with cream cheese and salmon inside).

Lox bits also work in lo-mein with the right sauce...

Oh, and I didn't win the drawing for those Food Network VIP tix, sorry Laura :(

Lox is smoked salmon, right? Have you ever tried scrambled eggs with smoked salmon? Just a little bit of creme fraiche mixed in when it's finished cooking. Yum. I used to get this when I was still a omnivore.

I'm torn between "What are you doing?! That should be on top of a nice bagel!" and "You can do almost anything with enough supercooled gas (I'm also thinking of the do-it-yourself liquid-nitrogen ice cream recipe)."
