Wednesday is my Saturday. Don't I get another day off?

Okay, back on the damn pony, Gilman. Books to write, bills to pay, chaos to tame...

And I have a new power adapter from Dell, courtesy of the DHL guys. Yay DHL. Yay powered-up laptop! (the desktop is good for short-term work, but when I'm hunkered down for hours at a time, or traveling, I need my laptop).

Meanwhile, I was playing in the kitchen. For those who occasionally have need of an easy, rich dessert:

1 cup sweetened condensed milk
1 cup nonfat plain yogurt
1/2 cup orange juice
a double handful of fresh or frozen (thawed) sliced strawberries (or fruit of choice)
graham cracker cups

Blend the milk and yogurt in a bowl. Add in the oj. Pour into 12 graham cracker crusts and bake at about 300 degrees for about half an hour (we're still fiddling with the perfect time/temps). Add sliced strawberries for the last few minutes and then put in the fridge for several hours/overnight to set. A nice little sweet with a lot of satisfying creaminess.

Despite the non-fat yogurt, this is NOT a diet-friendly dish! [I'm guestimating about 300 calories per dessert, although it's not as high-fat as the taste would suggest, thanks to the yogurt] Small portions are key....

I am also fine-tuning an equally simple spice cookie recipe, as sort of an antidote to the work-intensive gingerbread recipe, and playing around with adaptions to a very basic ricotta terrine I had over the holidays. Yum.

Simple is my watchword right now in the kitchen. Maybe in the Spring I'll be inspired to get tricky again.

Oooo yeah. I wonder how it would work as a regular cheesecake-shaped thing? (Thinking of the cheesecake addicts among the winter Torture-Lady-clinic crew--and of the fact that when you've been out with horses all day, you get hungry, and you can afford a few extra calories--and there's always fat-free condensed milk.)

Since this was based on a pudding-type filling, I'm not sure how well it would work in a larger crust -- I suspect it won't cut at all, much less well. You'd probably have to add an egg as binder... (I was trying to keep it egg-free, myself)
