I just realized that I've never made coq au vin.

This will be remedied in the near future. Locals, take note.

I also have in my paws some notes for caramelized oranges and chocolate mousse....

Coq au vin is actually the first dish I learned to make, back when I was about 13 years old. I took a half-year cooking class in my first year of high school, when Home Ec was still considered a subject, and our big graduation/final exam was a French dinner, with coq au vin for the main course.

(which, btw, was so long ago I couldn't tell you what it tasted like. I know we thought it was the height of coolness to be able to use wine in school, even though the alcohol cooked off....)
