Aunt Chilada's is good, and not far from your Phoenix reading, iirc.(my sense of direction is as bad as my sense of Mexican food is good, though, but hey, cute name, and a real local restaurant. I know some people absolutely prefer that.)
In the east valley, (Mesa) I'd go with Rosita's. I used to eat at the mesa one so often the waitstaff knew me.
