Leftovers by Design
Mar. 15th, 2012 06:40 pmEarlier this week, when I was too sick to eat, I nonetheless had a catfish filet that needed to be cooked (I hate freezing fresh fish, it tastes all wrong, after). So I did a quick almond-milk-and-cornmeal dredge, pan cooked it, and shoved it in the fridge.
Tonight, I made brown rice, then tossed a sliced zucchini, several (ok, 5) cloves of garlic, and a mincing of duck fat from last night's duck breasts, and sauteed it until the zukes were golden-soft, then added the catfish filet, chopped coarse. Served over brown rice, it's not entirely healthy (see: duck fat) but close enough as makes no nevermind.
The only problem with it, is that, even with a green salad, it's sort of...monochrome. So I added a glass of red wine.
