On Decanting, via the NYT:    For the record, I have a decanter that I use...sparingly.  Most of my inexpensive and really expensive wines never see it - the big, bold, younger wines of mid-price, do.  But it, like so much of taste, is a personal choice.

I decant old red wines because there is sludge and they breathe better in the decanter which shaped like triangle.

I always decant vintage port and elderly claret, but that's mostly because I like fussing about with a candle &c. I don't really mind the crunchy bits.

Asimov left off one other reason for decanting in his article: to warm a wine that is too cool. Exposing a young white or rose to air does help it open. But, if it has been kept in a typical refrigerator, the temperature being lower than optimal acentuates acidity and can mask lots of other fun aromatics.

I decanted a white for a resaturant guest just last night for this reason. Not a common request, but it happens.

It was a 2009 white Rioja. One that aged on lees, so has a little more "oomph" body-wise than some. It probably would have opened just fine in the glass. I think the guest was mostly concerned that it show well quickly because they'd brought their toddlers along and one was a bit cranky.

I will confess that it pains me a little when someone asks me to place aan already chilled, rich, young white Burgundy in an ice bucket. Guests like what they like, though, so into the ice water it goes.

Since I love both Sauvignon Blanc and Viognier, I have tried a couple of these, but alas, they were sharp and I disliked intensely. Of course, you cannot tell ahead of time, and I was not offered a taste first. Fortunately, more and more restaurants are offering one.
