Salmon ranges from pale pink to deep red in color, but the intensity of the color is a good indicator of quality and taste (not always, but generally). I got spoiled rotten my first trip to Alaska because I was there during the running and had fresh-caught (as in "an hour ago") salmon pretty much every night for dinner. Except when I had halibut. Yum.

Salmon is like swordfish. Done well it's sublime. Done badly, it's a crime.
